I’ve tried lots of BBQ Shrimp recipes, but this is my newest favorite. Simple, but delicious with a little kick (or a lot, depending on how many chipotle peppers you use.) For grilling I find that Tiger shrimp, because of their large size and stronger flavor work best. Sorry I don’t have a picture, of these. I was too busy eating!
- 1 lb. of shrimp (bigger the better)
- 3 tbsp butter, melted
- 1/4 cup of your favorite BBQ sauce
- 2 chipotle peppers (from a can, with adobe sauce), chopped
- 2 cloves minced garlic
- 1 tbsp lime juice
Mix all the ingredients together to create your marinade. Peel and de-vein the shrimp. Place shrimp into the marinade, cover and refrigerate for 30 minutes. Thread the shrimp onto skewers and grill until opaque, about 4 minutes a side. This dish goes well with simple grilled pineapple, which you can grill on skewers along side the shrimp.
